Rosemary Roasted Pistachios

A batch of pistachios, fresh and warm from the oven, accented with fresh rosemary, a drizzle of olive oil, and a pinch of sea salt is just so delicious. You’ve probably seen products like this for sale in gourmet shops, but if you love the flavor of herbal roasted nuts, you don’t have to purchase them at the store. You can easily do it yourself. This simple recipe for Rosemary Roasted Pistachios is a perfect appetizer for your next party, or a home-made gift in a mason jar for the holidays or a hostess present. One of my favorite ways to highlight this recipe is to simply pop it in the oven right before I’m going to serve it. When these flavorful nuts are served warm, that’s when they really shine—and the aroma is divine. I always have fresh rosemary growing in my garden, as this Mediterranean herb loves the California sunshine. If you don’t have access to fresh rosemary, try using dried. This is all you need to make this recipe: pistachios in shell, extra virgin olive oil, fresh rosemary, and sea salt.
Just spread the pistachios on a baking sheet, drizzle with olive oil, and sprinkle with rosemary and salt, then roast until golden brown.
