  1. Place pistachios and olive oil into the container of a high power blender.
  2. Process until pistachio butter reaches desired consistency. May need to stop and scrape down sides as needed.
  3. Transfer to a jar with a tight-fitting lid. Makes about 1 cup; 8 (2-tablespoon) servings.
