Instructions

  1. Place soy milk, lemon juice, Dijon mustard, extra virgin olive oil, sea salt, and white pepper into the container of a small blender (using an immersion blender with tall mixing container can work well for this too).
  2. Process the ingredients in the blender for about 3-4 minutes, until very smooth and thickened.
  3. Transfer to an airtight container, cover, and chill. Mixture will thicken as it chills. Makes a smooth, light mayonnaise with a yogurt-like consistency.
  4. Store in the refrigerator for up to 2 weeks.
  5. Serve as a spread on sandwiches or as a dressing on salad. Use this as a substitute for any recipe that calls for “mayonnaise”.
  6. Makes 8 servings (about 2 tablespoons each).
