I love to enjoy these yummy, succulent fruits when I have the chance. And this simple, rustic preparation method celebrates the beauty of perfectly ripe fresh peaches, while elevating them and making them just a tad special. All you have to do is brush them with an olive oil-basil marinade and grill them up in minutes. Serve them with plant-based ice cream for a special treat. This is a great recipe for outdoor cooking, summer parties, or holidays. Plus, it’s very low in added sugar, completely plant-based (vegan) and gluten-free, and based on only 5 ingredients you can whip up so quickly!

Celebrate fresh peaches with this super simple, healthy, light recipe for Grilled Peaches with Basil—it’s vegan, gluten-free and includes only 5 ingredients.

Instructions

  1. Place peaches in a 9×9 inch baking dish, cavity facing up.
  2. Whisk together olive oil, vinegar, agave nectar and chopped basil. Drizzle over peaches and marinate for 30 minutes.
  3. Heat a grill. Place peaches (cavity facing up) on hot grill and grill for 3 minutes. Turn over and brush with remaining vinaigrette in dish. Grill for 3 minutes.
  4. Garnish with fresh basil leaves and serve immediately.
  5. Makes 4 servings (2 halves each).

Excellent served with sorbet or vanilla soy ice cream.
