Yes, you really can make vegan mayonnaise at home with just 4 ingredients (not including pantry staples) that you probably have on hand right now! This super easy, step-by-step guide on how to make plant-based, gluten-free mayo, takes only 5 minutes to make, and it is based on real, whole plant food ingredients: soy milk, lemon juice, dijon mustard, extra virgin olive oil, salt, and white pepper. Whip up a batch, and use it in all of your favorite recipes, including sandwiches, casseroles, dressings, dips, sauces, and veggie burgers.

To make vegan mayonnaise, this is what you’ll need:

½ cup soymilk, unsweetened, plain (may substitute with oat milk)
1 tablespoon lemon juice
1 teaspoon Dijon mustard
1/4 cup extra virgin olive oil
Pinch sea salt
Pinch white pepper
Small blender (or immersion blender)

Step-By-Step Guide

Gather all of your ingredients together for this recipe: soy milk, dijon mustard, extra virgin olive oil, white pepper, lemon juice, and salt.
Measure ½ cup soymilk, unsweetened, plain (may substitute with oat milk) into the container of a small blender. You may also use an immersion blender.
Add 1 tablespoon lemon juice to blender container.
Add 1 teaspoon Dijon mustard to blender container (use coarse ground for more texture, or smooth ground for smoother texture).
Add 1/4 cup extra virgin olive oil to blender container.
Add pinch white pepper to blender container.
Add sprinkle of sea salt to blender container.
Cover the blender container with lid, and blend for about 3 minutes, until smooth, creamy and slightly thickened. Alternatively, use an immersion blender for about 4 minutes.
Transfer to an airtight container and store in the refrigerator for up to 2 weeks. Makes a little more than 3/4 cup.
Serve as a spread or condiment with your favorite breads, flatbread, sandwiches, or veggie burgers. You can also use it in salad dressings, dips, casseroles, and other recipes that call for “mayonnaise”.
