How to Make Vegan Mayonnaise

If you’re on a completely plant-based diet, you may avoid mayonnaise, as it typically contains egg products.  Sure, you can purchase wonderful substitutes, such as Veganaise, which is truly creamy and delicious.  However, did you know that you can make your own vegan mayonnaise with just a few simple ingredients?  Whip this tasty vegan mayonnaise up and keep it in an airtight container in the refrigerator for use later on.  You can spread it on sandwiches, fold it into sandwich fillings and salads, and whip it into dressings and sauces.

Blend ingredients until mixture is foamy and thickened.

Instructions

  1. Place soy milk, lemon juice or Dijon mustard in a tall narrow cup.  Using an immersion blender for best results, whip the ingredients.  Slowly add olive oil, one tablespoon at a time, whipping for about 4 minutes, until mixture is foamy and thickened.
  2. Pour into a container and refrigerate.  Mixture will thicken as it chills.  Season with a pinch of sea salt or white pepper as desired.
