- Place soy milk, lemon juice or Dijon mustard in a tall narrow cup. Using an immersion blender for best results, whip the ingredients. Slowly add olive oil, one tablespoon at a time, whipping for about 4 minutes, until mixture is foamy and thickened.
- Pour into a container and refrigerate. Mixture will thicken as it chills. Season with a pinch of sea salt or white pepper as desired.
