What is Choucroute Garnie?
The Alsace region of France is spectacular and unique. Due to its location near the German border, it has a French-German feel in architecture, culture, and food traditions. One of their most traditional dishes—choucroute (which means sauerkraut in French) garnie—feels very German. I visited Alsace more than 30 years ago, and then again for my honeymoon a few years later. Ever since, this dish has been rolling around in my head, and with today’s new love affair for fermented foods, I thought about resurrecting it in a modern, simple, healthier plant-based version. Alors, voila, c’est ici! My vegan chourcroute garnie! I love the juxtaposition of the salty, pickled flavors of fresh sauerkraut with earthy, sweet root vegetables and savory vegan sausages.
