Easy Whole Wheat Vegan Biscuits

Sharon Palmer RD

Yes, you can make the most amazing, flaky, easy whole wheat vegan biscuits in no time with this simple basic recipe, which relies upon only five ingredients—all of which you probably have in your kitchen right now! This super quick budget-friendly vegan biscuit recipe is a favorite in my household. I love to make it as a topping on veggie pot pie or as a home-made quick bread to accompany a classic dinner, such as heirloom beans with root vegetables. They are also delicious for a weekend breakfast or brunch (serve it with my tofu scramble!) piled with chunky fruit preserves. You can even use these biscuits to create a yummy sandwich—try to fill it with your own homemade tempeh bacon. Or serve vegan biscuits and gravy by cooking up a quick batch of my mushroom gravy here and just piling that good sauce all over piping hot biscuits.

Growing up in the South, my mom always loved a good classic biscuit, and we enjoyed fresh biscuits in our home to accompany our plant-powered meals all the time. I borrowed from her own classic recipe to create this healthy biscuit recipe, which features half whole wheat flour (you can make it 100% whole wheat if you prefer), a touch of vegan margarine, and plant-based milk. Just mix up the dough, roll it out, cut into circles, and pop the biscuits in the oven while the rest of your meal is cooking. You can also make this recipe into a gluten free biscuits version by swapping out the wheat flours for a gluten-free flour blend. If you’re in a rush, you can use this recipe for drop biscuits. Follow the recipe as directed, but instead of rolling out the dough and cutting it into circles, drop the dough into large spoonfuls onto a baking sheet and bake as directed in this recipe.

Step-By-Step Guide:

Mix flours and baking powder in a bowl, then cut in vegan margarine with a fork until crumbly.
Add plant-based milk and mix with a fork to make a soft dough.
Place dough on a floured surface and roll out to about one inch thickness.
Cut into 2-inch circles using a biscuit cutter or glass.
Place in oven and bake at 350 for about 10-15 minutes.
Remove from oven and enjoy!
