Shaved Kohlrabi, Carrot, Radish Slaw

Winter-spring produce has never been prettier than in this light and lovely, pastel shaved slaw, featuring kohlrabi, sweet baby carrots, and pretty pink radishes. If you’ve never tried kohlrabi, this should be your first try. This bulb is in the cruciferous family, and it is ideal in shaved salads. I used a food processor to thinly slice the vegetables, but you can also use a hand held mandoline slicer or even a vegetable peeler to get thin slices. Mixed with a vegan mayo, golden raisins, and crunchy walnuts, this shaved kohlrabi, carrot, radish slaw aims to please.

Description

Mixed with a vegan mayo, golden raisins, and crunchy walnuts, this shaved kohlrabi, carrot, radish slaw aims to please.


Ingredients

Scale
  • 3 small kohlrabi bulbs, trimmed, unpeeled
  • 6 small (about 1 ounce each), tender carrots, trimmed, unpeeled
  • 10 small pink radishes, trimmed, unpeeled
  • ¼ cup vegan light mayonnaise
  • ½ cup coarsely chopped walnuts
  • ½ cup golden raisins
  • 2 tablespoons chopped fresh parsley
  • ¼ teaspoon black pepper

Instructions

  1. Shave kohlrabi, carrots and radishes into very thin slices with a food processor using a fine slicing attachment, or a mandoline food slicer.
  2. Transfer shaved vegetables into a medium mixing bowl.
  3. Stir in light mayonnaise, walnuts, golden raisins, parsley, and black pepper. Stir until well combined.
  4. Serve immediately.
