Description
Mixed with a vegan mayo, golden raisins, and crunchy walnuts, this shaved kohlrabi, carrot, radish slaw aims to please.
Ingredients
- 3 small kohlrabi bulbs, trimmed, unpeeled
- 6 small (about 1 ounce each), tender carrots, trimmed, unpeeled
- 10 small pink radishes, trimmed, unpeeled
- ¼ cup vegan light mayonnaise
- ½ cup coarsely chopped walnuts
- ½ cup golden raisins
- 2 tablespoons chopped fresh parsley
- ¼ teaspoon black pepper
Instructions
- Shave kohlrabi, carrots and radishes into very thin slices with a food processor using a fine slicing attachment, or a mandoline food slicer.
- Transfer shaved vegetables into a medium mixing bowl.
- Stir in light mayonnaise, walnuts, golden raisins, parsley, and black pepper. Stir until well combined.
- Serve immediately.
