Plus this smoothie is just so fruity and delicious. Best of all, you can whiz up this smoothie recipe in seconds in a small or large blender. It’s perfect for any season, as you can use frozen berries when fresh aren’t available, and it includes cool weather produce, like carrots and kale. 

What is edible seaweed? 

The cool thing about this smoothie is that it features seaweed, which I’m a huge advocate of within your healthy plant-forward diet. seaweed, which is actually marine algae that comes in brown, red, or green forms, has been an important food to coastal communities through the millennia. Commonly available seaweed includes dulse, kelp, and nori. Throughout history, people around the world have understood just how important tapping into seaweed was for survival. Asian countries have used seaweed for centuries in dishes like sushi and salads. Pacific Islanders mixed it with vegetables. And in the British Isles, seaweed was eaten with oatmeal. What’s really intriguing is that seaweed offers an abundant, sustainable source of food that can be grown without the need for land, irrigation, or chemicals.

Though each species of seaweed has a slightly different nutritional profile, in general, they contain fiber, vitamins A, C, E, and K, calcium, folate, iodine, iron, magnesium, niacin, omega-3 fatty acids, and protein. Description

Sip like a mermaid with this nutrition-packed, creamy, delicious Seaweed Mixed Berry Smoothie, which features the sustainable health power of edible seaweed.


Ingredients

Scale
  • 2 tablespoons (15 grams) dried seaweed (i.e., dulse, kelp, nori)
  • 8 ounces fresh or frozen mixed berries (i.e., blueberries, strawberries, raspberries, blackberries)
  • 1 cup coarsely chopped kale
  • 1 medium (about 3 ounces) carrot, unpeeled, chopped into chunks
  • ¼ cup ground flax seed
  • 1 ½ cup plant-based milk, unsweetened, unflavored (i.e., soy, oat, almond)

Instructions

  1. Place seaweed, berries, kale, carrot, flax seeds, and plant-based milk in the container of a blender
  2. Process until very smooth (2-3 minutes). 
  3. Pour into two large glasses (about 1 ½ cups each). 
  4. Enjoy immediately, or refrigerate in covered containers until serving time. 

Notes

Find seaweed in most well stocked supermarkets, online, or in Asian stores.

May substitute kale for other leafy green, such as spinach, chard, or beet greens.
