This Purple Power Blueberry Smoothie is packed with purple plant-powered antioxidant compounds, by way of wild blueberries, purple sweet potatoes, red chard, beet juice, and flax seeds. Blueberries are particularly potent in anthocyanins, compounds linked with disease protection. Plus, I love adding them to smoothies because their royal purple shade and sweet flavor can overshadow the strong tastes of added greens. Everyone will love this 100% plant-based smoothie!

In this smoothie, those slow-digesting carbs, plant proteins, and healthy fats make this smoothie a meal in one or powerful snack or recovery drink. Plus it’s creamy, zesty and downright delicious.

Ingredients

  • ½ cup frozen blueberries
  • ½ cup cooked, cubed purple sweet potatoes, cooled*
  • 2 leaves red Swiss chard (or other greens)
  • 1 tablespoon flax seed
  • ¼ cup beet juice
  • ½ cup plant-based milk (i.e. soy, almond, or hemp)
  • 1 teaspoon fresh ginger
  • 1 tablespoon maple syrup (optional)

Instructions

  1. Place all ingredients in a blender container and process until smooth.

Notes

*Cook sweet potatoes the day before and chill; or microwave cubed sweet potatoes for about 8 minutes in a microwave proof dish. If you can’t find purple sweet potatoes, use an orange-colored variety.
