Ingredients
- ½ cup frozen blueberries
- ½ cup cooked, cubed purple sweet potatoes, cooled*
- 2 leaves red Swiss chard (or other greens)
- 1 tablespoon flax seed
- ¼ cup beet juice
- ½ cup plant-based milk (i.e. soy, almond, or hemp)
- 1 teaspoon fresh ginger
- 1 tablespoon maple syrup (optional)
Instructions
- Place all ingredients in a blender container and process until smooth.
Notes
*Cook sweet potatoes the day before and chill; or microwave cubed sweet potatoes for about 8 minutes in a microwave proof dish. If you can’t find purple sweet potatoes, use an orange-colored variety.
