Description

This super simple, vegan, gluten free Easy Brown Spanish Rice recipe contains only 7 ingredients! Serve this healthy rice recipe with spanish rice and beans, burrito bowls, tacos, and beyond!

Instructions

  1. Heat olive oil in a medium pot or Dutch oven over medium heat. 
  2. Add brown rice and cook while stirring for 1 minute.
  3. Add water, vegetable bouillon cube, tomato paste, garlic powder, chili powder, oregano, and salt. Mix well, cover pot with a lid, and cook over medium heat, stirring occasionally,  for about 45 minutes, until liquid is absorbed and rice is tender. May add additional water if rice begins sticking at the bottom. 
  4. Makes six servings (about ½ cup each). 

Notes

Instant Pot Instructions: Add all of the ingredients to the container of the Instant Pot, stir well, seal the lid, push the “rice” setting, and cook according to manufacturer’s instructions. When done, quick release the pressure, stir to fluff, and serve. 

Slow Cooker Instructions: Add all of the ingredients to the container of the slow cooker, stir well, cover, and cook on high for 4-6 hours or low for 8-10 hours, according to manufacturer’s instructions. When done, stir to fluff, and serve.
