I swapped out classic potatoes for sweet potatoes and added earthy zucchini and yellow squash for a nutrient-rich, flavorful combo. This gluten-free, vegan recipe for Sweet Potatoes and Zucchini Home Fries is also baked in the oven for a healthier, easier preparation style.

Try a variety of sweet potatoes to add new colors and textures to your cooking, including Japanese sweet potatoes or even purple sweet potatoes. You can also mix up your zucchini and yellow squash to try a variety of squashes available in farmers markets and home gardens. It’s a great way to use up that zucchini growing in your garden too!

The comforting bliss of home fries—a classic potato and veggie scramble—is made even healthier in this baked, gluten-free, vegan version filled with sweet potatoes and summer squash.



  • 2 small sweet potatoes, peeled, chopped into small cubes
  • 1 medium onion, diced
  • 1 medium bell pepper, diced
  • 2 small summer squash (zucchini, yellow, silver), chopped into small cubes
  • 1 ½ tablespoons extra virgin olive oil
  • 2 cloves garlic, minced
  • ½ teaspoon smoked paprika
  • 1 teaspoon turmeric
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon salt (optional)
  • 2 tablespoons fresh parsley, chopped


  1. Preheat oven to 375 F.
  2. Place sweet potatoes, onions, pepper, and zucchini in a 9 x 13 inch baking dish.
  3. Drizzle with olive oil.
  4. Sprinkle with garlic, smoked paprika, turmeric, cayenne pepper, and salt (optional).
  5. Toss all ingredients together well to distribute evenly.
  6. Place on top rack of the oven and bake for about 45 minutes, stirring occasionally, until vegetables are tender and golden brown.
