Turmeric Mango Carrot Smoothie (Vegan, Gluten-Free)

You won’t believe the gorgeous orange color of this exotic vegan turmeric, mango, carrot smoothie, which is oh-so creamy (thanks to cashews). Plus, it’s an antioxidant powerhouse, compliments of its potent ingredients. This smoothie is also rich in protein, healthy fats, fiber, vitamins, and minerals. Best of all, you can blend this 5 ingredient smoothie up in just a few minutes. The main ingredient is fresh turmeric root, which is increasingly available in natural food markets across the nation. Learn more about the health benefits and culinary style for turmeric here. If you can’t find fresh turmeric, then substitute dried turmeric spice, available pretty much at every grocery store.

You can also trade up the ingredients, depending on your preference. Throw in some leafy greens, swap bananas for mango, or add pineapple for a tropical hint. Whip it up for an easy breakfast, light meal on the run, or healthy snack. I love to pour this in a mason jar, screw on the lid, and tote it along with me when I’m on the road. Ingredients

  • 1 1-inch turmeric root (may substitute with 1 teaspoon ground, dried turmeric)
  • 1 small mango (or 1 1/2 cups frozen)
  • 2 small carrots, coarsely chopped
  • ¼ cup cashews
  • 1 cup plain, unsweetened plant-based milk (i.e. almond, soy, coconut)
  • 5 ice cubes

Instructions

  1. Place all ingredients in a blender and process until smooth.
  2. Pour into two glasses and enjoy!
