Ah, strawberries. Is there anything that better signals the return to spring and summer, and all that is sweet, light, sunny, and fun? For me, strawberries conjure up childhood memories of picking these berries on warm summer days growing up in the Pacific Northwest. I can still remember the aroma of moist, warm earth mingling together with sweet, ripe strawberries into an intoxicating scent. Since I live in strawberry central—Southern California, that is—I am surrounded by cheery, fragrant strawberry farms wherever I go. You can see strawberries popping their cheerful red faces out of their canopy of green leaves in farms along the Pacific Ocean, where they love the coastal climate. And I gather these beauties at my farmers market where I shop each week. I even have a big strawberry plant growing in my vegetable garden. Strawberries’ sweet, juicy flavor suits so many plant-based recipes, from a simple bowl of oats in the morning, to a fresh smoothie for snack-time, to a deep green salad at dinner. One of my favorite things to do with strawberries (besides eat them plain and simple) is to serve them with a light and healthy shortcake, such as I do in my book Plant-Powered for Life.
