Vegan Dark Chocolate Orange Waffles

I love the flavor combination of dark chocolate and oranges, don’t you? Something about the zesty brightness of ranges adds a pop to the bitter darkness of chocolate. It doesn’t hurt that I have the most amazing oranges in my small orchard; thus, I’m always looking for new ways to showcase these fruits in my kitchen. This vegan recipe for dark chocolate waffles is filled with 100% whole grain flours and relies upon aquafaba (bean liquid) as an egg replacement. Topped with a sugar-free orange sauce, these Vegan Dark Chocolate Orange Waffles are so impressively beautiful, but as simple as can be. Try this recipe for your next brunch or lazy weekend breakfast.

Vegan Dark Chocolate Orange Waffles

Description

Call upon the gorgeous combo of dark chocolate and orange in these vegan, whole grain waffles that are rich in flavor and as pretty as can be.


Ingredients

Waffles:

Orange Sauce:

  • 1 cup orange juice
  • 2 tablespoons cornstarch
  • 1 tablespoon vegan margarine
  • 2 medium oranges, peeled, sliced

Instructions

  1. Place aquafaba (the liquid from one 15-ounce can of beans) into an electric mixer bowl with sugar. Whip for about 5 minutes, until soft peaks form.
  2. Gently fold in orange juice and zest, plant-based milk, vegetable oil and vanilla until smooth.
  3. Add flour, cornmeal, cocoa powder, and baking powder. Gently fold in just until combined.
  4. Preheat a waffle iron.
  5. Spray with nonstick cooking spray.
  6. Pour batter (about 1/3 cup) over hot waffle iron, close, and cook on medium-high setting, according to package directions, until crisp. Remove from waffle iron and repeat, making a total of 5 large waffles.
  7. Meanwhile, make Orange Sauce by placing orange juice and cornstarch in a small pot and whipping with a whisk until smooth. Add margarine and cook over medium heat, stirring with whisk, until thickened. Remove from heat and stir in sliced oranges.
  8. Serve waffles with orange sauce. Makes 5 servings.
