  1. Combine plant-based milk, chia seeds, cocoa powder, maple syrup and vanilla in a mixing bowl, stirring well with an electric mixer. Transfer the pudding to an airtight container and refrigerator at least 8 hours (or overnight).
  2. Remove from refrigerator and spoon 1/4 cup of pudding into 4 serving dishes or jars. Layer each dish with 1/4 cup strawberries. Spoon a final layer of 1/4 cup pudding onto each serving dish. Garnish with remaining strawberries. Serve immediately.
