Pumpkin Pie Overnight Oats (Vegan, Gluten-Free)

Sharon Palmer

Today I’m combining my favorite fall flavors of pumpkin, pumpkin seeds, and pumpkin spice into a nutrient-packed grab-and-go breakfast with my Pumpkin Pie Overnight Oats. One of my favorite, healthy, plant-based, easy breakfasts is overnight oats. I make them in a single serving mason jar the night before, then for breakfast I’m all set. You can enjoy these oats chilled, or heat them up for a comforting breakfast. You can even make up a few overnight oat containers all at once for multiple breakfasts during the week.

This easy version of overnight oats celebrates fall with warming, comforting spices and pumpkin. Pure breakfast comfort!
