You can combine your favorite flavors of pumpkin, pumpkin seeds, and pumpkin spice into a nutrient-packed grab-and-go breakfast with this amazing Pumpkin Overnight Oats recipe. One of my favorite, healthy, plant-based, easy breakfasts is hands down overnight oats. I make them in a single serving mason jar the night before, then for breakfast I’m all set. You can enjoy these oats chilled, or heat them up for a comforting breakfast. You can even make up a few overnight oat containers all at once for multiple breakfasts during the week. This easy, simple healthy pumpkin oatmeal recipe can be made in minutes for a healthy, vegan, gluten-free breakfast for the whole family! How long do pumpkin overnight oats last?

They can last up to 5 days in the fridge. Make sure to properly chill them if you pack them away to enjoy at work or on the go. You may also want to add the pumpkin seeds at the last minute so they retain their crunch.

  1. Place oats in a mason jar or 2-cup container. Add plant-based milk, maple syrup, pumpkin pie spice, pumpkin, pumpkin seeds, and flax seeds. Cover with a lid and shake really well (or stir with a spoon). Refrigerate overnight.
  2. The next morning, enjoy oats cold or warm. May add additional plant-based milk to achieve desired consistency.

Notes

If you prefer your oats warm, heat the (glass) container in the microwave for 2 minutes before adding toppings.
