  1. Place pistachios and olive oil into the container of a high power blender or food processor.
  2. Process until pistachio butter reaches desired consistency. I prefer my pistachio butter on the crunchy side, but you can keep blending it until it’s smooth. May need to stop and scrape down sides during the blending process.
  3. Transfer to a jar with a tight-fitting lid. Makes about 1 cup or 8 (2-tablespoon) servings.
