- 1 cup shelled pistachios (may use unsalted or lightly salted, according to your preference)
- 2 1/2 tablespoons pistachio oil (may substitute with avocado or extra virgin olive oil)
Instructions
- Place pistachios and olive oil into the container of a high power blender or food processor.
- Process until pistachio butter reaches desired consistency. I prefer my pistachio butter on the crunchy side, but you can keep blending it until it’s smooth. May need to stop and scrape down sides during the blending process.
- Transfer to a jar with a tight-fitting lid. Makes about 1 cup or 8 (2-tablespoon) servings.
