Easy Silky Lemon Tofu Pudding Cups

Make the easiest, yummiest vegan dessert in just 10 minutes with only four ingredients: silken tofu, lemon curd, graham cracker crumbs, and coconut oil. That’s it! Silken tofu—shelf-stable plain tofu with a smooth, custard-like texture—can be a wonderful base for delicious plant-based desserts, such as these Easy Silky Lemon Tofu Pudding Cups. Just whip tofu with a jar of vegan lemon curd to make a fluffy pudding, mix together graham cracker crumbs with coconut oil to make crumbs, and then assemble these easy tofu pudding cups for a quick and delicious dessert on the fly. Top it the way you like, with lemon slices, shaved chocolate, berries, or vegan whipped cream. You can also make this recipe into a lemon tofu pudding pie by patting the graham cracker crumbs into the bottom of a dish and topping with the pudding, or make this lemon tofu pudding without the graham cracker crumbs altogether for a two-ingredient easy recipe.

I like to use my immersion blender to make this fluffy lemon pudding, but you can also blend it with an electric mixer, blender, or food processor. What is lemon curd? It’s a traditional British sweet-tart, custardy spread or topping made with lemon juice and zest, sugar, eggs, and butter. However, you can find brands, such as Good Good that are made without sugar, as well as eggs and butter. The net result is a light, healthy dessert that tastes as good as it looks!

Here’s all you need to make this recipe: silken tofu, lemon curd, graham cracker crumbs, and coconut oil.

Are graham crackers vegan? Many brands of graham crackers contain honey, so they are not technically vegan. If you avoid honey, look for vegan graham crackers made without honey. Are graham crackers gluten free? No, most brands contain wheat. You can, however, find many vegan gluten free graham crackers, such as S’moreables. If you use gluten free graham crackers and lemon curd in this recipe, then the entire recipe is gluten free!

Lemon Tofu Pudding:

  • 1 (12-ounce) package silken firm tofu
  • 1 (10-ounce) jar vegan lemon curd (see below)

Graham Cracker Crust:

  • ½ cup (about 8 squares) graham cracker crumbs (look for vegan graham crackers; see below)
  • 2 tablespoons melted coconut oil

Garnish (optional):

  • Additional graham cracker crumbs
  • Vegan whipped topping
  • Lemon slices
  • Shaved dark chocolate
  • Berries
  • Mint leaves


Instructions

  1. Place lemon curd and silken firm tofu in a medium bowl and use an immersion blender or electric handheld mixer to mix until smooth and fluffy. Alternatively, place in a blender or food processor to mix. Set aside. Makes about 3 cups pudding.
  2. Mix graham cracker crumbs and melted coconut oil in a small mixing bowl and toss with a fork until well distributed. Makes about 2/3 cup graham cracker crust crumbs.
  3. To serve, press about 1 1/2 tablespoons graham cracker crust crumbs into the bottom of 6 small bowls or cups (should hold about 6 ounces). Spoon about ½ cup lemon tofu pudding into each bowl or cup. Garnish as desired with additional graham cracker crust crumbs, vegan whipped topping, lemon slices, shaved dark chocolate, berries, and mint leaves.
  4. Serve immediately or chill before serving. May store covered in the refrigerator for up to 5 days.
  5. Makes 6 small servings (about ½ cup each).

Notes

Make this recipe into a lemon tofu pudding pie by patting the graham cracker crumbs into the bottom of a pie plate or dish (about 1 quart capacity) and topping it with the pudding and garnishes, as desire.

Make this lemon tofu pudding without the graham cracker crumbs for a two-ingredient easy recipe—just skip step 2-3, and garnish as desired.

Look for vegan lemon curd brands, such as Good Good, that are made without sugar, eggs and butter.
