Vegan Apple Crumble with Cinnamon

Nothing spells comfort quite like the combination of spicy cinnamon and sweet apples! One of the healthiest, fruit-centric desserts you can whip up is this baked Vegan Apple Crumble with Cinnamon, with a thick layer of juicy apples and a crunchy whole grain topping. This recipe is completely plant-based and can be easily made into a gluten free apple crumble. And every delicious bite is packed with fiber and nutrients. Minimal in sugar, fat, and calories, this dessert is healthy enough to eat for breakfast—really!

While it looks complicated, it’s anything but. Just peel the apples, and toss them with orange juice (the natural sweetener in the fruit filling), and cinnamon. Place the apple slices in a pie dish. Then whisk together an easy crumble topping with oats, along with flour, walnuts, cinnamon, a pinch of brown sugar, and a bit of vegan margarine. Sprinkle it over the apples, bake, and enjoy! Your kitchen will be filled with sweet, warm flavors. I love to serve this recipe with a scoop of vanilla plant-based ice cream for a special treat. But you can also enjoy it all on its own. And it’s fabulous for holiday baking, including Thanksgiving and Christmas desserts for your table.

You can use this recipe as a classic guide for other crumbles. Substitute the apples for fresh or frozen berries, canned or fresh peaches, or pears. Just about any fruit will work. It’s a great way to take advantage of a bounty of fruit, such as an abundant apple or pear tree, or seasonal fruit at the farmers market. Enjoy it for dessert, as a mid-meal snack, or pack it up to go for lunch (it’s fabulous with coffee!). With only nine ingredients, you can get this dessert in the oven in about 15 minutes. Easy, healthy and delicious—just the way I like it.

Ingredients

Apple Filling:

  • 5 medium apples (5 ounces each), peeled, cored, sliced
  • ½ cup orange juice
  • ½ teaspoon cinnamon
  • 1 teaspoon brown sugar (optional)

Crumble Topping with Oats:


Instructions

  1. Preheat oven to 350 F.
  2. To make filling: Toss apple slices, orange juice, cinnamon, 1 teaspoon brown sugar (optional) together, and arrange in a 10-inch pie dish.
  3. To make crumble topping with oats: In a medium mixing bowl, stir together oats, flour, walnuts, cinnamon and brown sugar. Mix in margarine spread with a fork or pastry blender and your hands to make a crumbly dough.
  4. Sprinkle crumble topping over apple filling.
  5. Place dish in the oven and bake for about 45 minutes, until topping is golden brown and apples are tender yet firm.
  6. Remove from oven and serve while warm. Cover and store leftovers in the refrigerator for up to five days.

Notes

Make a gluten free apple crumble by substituting gluten-free flour for the white whole wheat flour.

Substitute apples for any type of fruit, such as peaches, apricots, berries, and pears.
