Talk about a cool way to enjoy cauliflower! This Cool Mint Cauliflower Salad—which is completely plant-based (vegan) and gluten-free—takes full advantage of chill ingredients, like mint, fennel, parsley, and citrus. Paired with cauliflower, green onions, and a creamy dressing—the recipe is literally a breath of fresh air! Plus, it’s a great way to celebrate seasonal, cool weather produce, including cauliflower, onions, fennel, citrus, and herbs. I have all of these things growing in my garden in the winter through spring. You can try growing a few of them yourself. But if you don’t have a garden, you can find these plant foods at your neighborhood supermarket or farmers market.

Cauliflower is part of the cruciferous family, and it contains sulfur compounds linked with cancer protection. It’s a good idea to enjoy more of these foods in your diet for optimal health. Fennel is an intriguing food, offering a crisp bite and licorice aroma and flavor to foods. I love fresh fennel in salads—the bulb is crisp and fresh, and the leaves have stunning aroma and taste. Fresh green herbs offer more flavor and depth to this salad, which is paired with lima beans (or you can use peas) for another shade of green. Really, this salad is just verdant with shades of green! A simple creamy dressing with citrus and mustard finishes off this fresh salad. Serve it as an accompaniment with sandwiches, stew, or past dishes, and pack it away for a flavorful salad on the go the next day. It lasts nicely in the refrigerator for a few days.

Ingredients

Cauliflower Salad:

  • 1 large head white or green cauliflower
  • 4 green onions, sliced
  • 1 small fennel bulb, sliced (reserving 1/4 cup chopped green fronds)
  • 2 tablespoons chopped mint
  • 2 tablespoons chopped parsley
  • 1 cup frozen lima beans or peas, thawed

Creamy Dressing:

  • ½ cup vegan mayonnaise
  • 1 teaspoon Dijon or whole grain mustard
  • 1 half lemon, juice and zest
  • Black pepper and sea salt to taste (optional)

Instructions

  1. To make cauliflower salad: Pour boiling water over cauliflower and allow to stand for 1 minute. Drain away water and cool in an ice bath. Mix cooled cauliflower with green onions, fennel, mint, parsley, and lima beans or peas.
  2. To make creamy dressing: In a small dish, mix together mayonnaise, mustard, and lemon juice and zest.
  3. Mix dressing into cauliflower mixture and distribute well. Add pepper and salt to achieve desired taste (optional). Chill until serving time.
