This simple, flavorful brown rice recipe will soon be your favorite side-dish for power bowls, tacos, burritos, and beyond. This Chipotle Tomato Rice is completely plant-based (vegan), gluten-free, and based on just a few whole food ingredients you can keep on hand quite easily. With only 6 ingredients (not including pantry staples), you can turn this simple whole grain dish into something fabulous in no time. A whole can of crushed tomatoes brings out a vibrant kick, beautiful color, and healthful rush of lycopene antioxidant compounds.

Whole grain brown rice is a good option for your plant-based pantry, as it pairs well with so many dishes, and is rich in nutrients, like fiber, protein, vitamins, and minerals. One of my favorite medium grain brown rice varieties grows right here in the state of California, in fact. You can make more healthful versions of rice side dishes, compared to many boxed versions, by adding just a few flavorful ingredients, such as onions, garlic, tomatoes, broth, and chipotle powder. Add a few garnishes, such as cilantro, parsley, and green onions for even more appeal. Turn to an Instant Pot to get this recipe done in minutes. I love having leftovers of this recipe, as it’s a great way to make meals easy the next day. Just add this rice to a bean burrito wrap, veggie burger mix, or as the foundation of a grain bowl and you’re set.

This simple, vibrant whole grain Chipotle Tomato Rice recipe, which is vegan and gluten-free, features only 6 ingredients, but it is rich in color, flavor, and nutrition.

Instructions

  1. Place olive oil in a medium pot and heat.
  2. Sauté onion and garlic in oil for 9 minutes.
  3. Add brown rice and toast it for 2 minutes, stirring.
  4. Add crushed tomatoes, water, bullion cube, chipotle seasoning, and salt (optional).
  5. Stir well, cover with a lid, and bring to a simmer. Cook over medium heat about 1 hour, until liquid is absorbed and grains are tender. May add additional water to replace water lost to evaporation as needed.

Notes

Instant Pot Instructions: Place all ingredients in the container of an Instant Pot, secure lid, and press “Rice” setting. Cook according to manufacturer’s instructions.
