It may look decadent, but this super easy, 100% plant-based (vegan) Chocolate Sundae Vanilla Cream dessert is light on sugar and fat, and packed with flavor. Based on a simple, classic vanilla pudding, this plant-based cream forms the foundation for toppings of dark chocolate chips, macadamia nuts, and shredded coconut. It’s really healthy enough you could eat it for breakfast! But it’s also a great way to enjoy a dessert without the guilt. 

Make up a batch and chill it to enjoy all week long. Fill individual cups or jelly jars to pack these up for lunch or snacking on the go, too. You can also swap out macadamia nuts for another type of nut, such as hazelnuts, walnuts, almonds, or pistachios.

Instructions

  1. Place cornstarch and salt in a medium saucepan and gradually mix in plant-based milk with a whisk until smooth with no lumps.
  2. Add maple syrup and vanilla and heat over medium, stirring constantly with a whisk until smooth (about 3 minutes).
  3. Remove from heat and cool, stirring with a whisk occasionally, for 10 minutes. Chill in the refrigerator for at least 1 hour and mix well before serving it.
  4. To serve: Fill individual serving dishes with ½ cup cream pudding, and top with 1/2 tablespoon shredded coconut, 1/2 tablespoon chopped macadamia nuts, and 1 tablespoon chocolate chips.
  5. Serve immediately.
