California Peach Bellini

I first had a Bellini in the famed place it originated, in Venice, Italy at Harry’s Bar. It is made with Prosecco (sparkling Italian white wine) and pureed white peaches. I really fell hard for Italian Prosecco, and since I became acquainted with it, I always have some on hand, especially for light cocktails.

I recently got a little inspiration from my friends at Pacific Coast Producers to make a light, no-added sugar, California-themed Bellini made with unsweetened canned peaches from California. It’s a virtual snap to put this together made with the goodness of peaches, which are just so good! You can also make this recipe completely Californian by swapping out the Prosecco for a nice, crisp California sparkling white wine.

Description

This light, no-added sugar, California-themed Bellini is made with unsweetened canned peaches from California and a light fizzy touch of Prosecco. It’s a go-to refreshing cocktail for any occasion.


Ingredients

Scale
  • 1 15-ounce can California sliced peaches, packed in natural juice (don’t drain), chilled
  • 1 750-ml bottle Prosecco or California sparkling white wine, chilled
  • 6 fresh mint leaves

Instructions

  1. Place the entire can of peaches into a blender and process until smooth.
  2. Place 2 tablespoons peach puree in the bottom of a champagne glass.
  3. Slowly fill glass with sparkling wine (3-4 ounces), allowing for bubbles to dissipate.
  4. Garnish with a mint leaf.  Makes 6 servings.
