Welcome to winter! Just because it’s cold outside, it doesn’t mean you can’t celebrate veggies in all of their winter glory. Some seasonal vegetables are available during the cooler months (depending on your location), including squash, carrots, beets, turnips, potatoes, green leafy vegetables, avocados, cabbage, broccoli, Brussels sprouts, and cauliflower. For thousands of years humans have been cherishing these vegetables, tucking them away in root cellars, for example, to help them survive the lean winter months. So, today I’m honoring winter vegetables in this amazing collection of plant-based (vegan) recipes from some of my favorite bloggers. Enjoy!
