Description

With only 7 ingredients, you can make this vegan recipe for Chia Pudding with Strawberries in under 10 minutes. With just a touch of maple syrup for sweetener and no added oils, this pudding relies upon chia seeds to add a creamy, thickness—and a dose of healthy nutrition.

Instructions

  1. Combine plant-based milk, chia seeds, cocoa powder, maple syrup and vanilla in a mixing bowl, stirring well with an electric mixer. Transfer the pudding to an airtight container and refrigerator at least 8 hours (or overnight).
  2. Remove from refrigerator and spoon 1/4 cup of pudding into 4 serving dishes or jars. Layer each dish with 1/4 cup strawberries. Spoon a final layer of 1/4 cup pudding onto each serving dish. Garnish with remaining strawberries. Serve immediately.
  3. Makes 4 servings (about 3/4 cup each).

Notes

For meal prep, follow step 1, but instead of transferring pudding to an airtight container, follow the instructions in step 2, portioning the pudding and strawberry layers in 4 Weck or Mason jars with tight fitting lids. Refrigerate for several hours to allow to thicken.
