Jicama Grapefruit Salad with Basil (Vegan, Gluten-Free)

Sharon Palmer

I’m a big fan of celebrating grapefruit season and using it in everything from simple grapefruit halves for breakfast to adding grapefruit in dishes, such as salads, pilafs, salsa, and desserts. This recipe celebrates grapefruit season in all it’s glory by combining it with other cool weather produce, such as jicama, greens, and herbs. The bitter-sweet, succulent fruit add just the right pizzazz, color, and texture to so many dishes. Plus grapefruit comes packed with two grams of fiber per serving and provides 100% of your daily recommended intakes for vitamin C. This colorful salad makes the perfect addition to your Meatless Monday meal, potluck, party, or even holiday menu. Plus, you can mix it up in just minutes with only 5 ingredients, not including pantry staples.
