I’m a big fan of celebrating grapefruit season and using it in everything from simple grapefruit halves for breakfast to adding grapefruit in dishes, such as salads, pilafs, salsa, and desserts. This recipe celebrates grapefruit season in all its glory by combining it with other cool weather produce, such as jicama, greens, and herbs. The bitter-sweet, succulent fruit adds just the right pizzazz, color, and texture to so many dishes. Description

This plant-based, gluten-free recipe celebrates grapefruit season in all its glory by combining it with other cool weather produce, such as jicama, greens, and herbs into a flavorful, healthy salad.


Ingredients

Scale
  • 3 cups assorted greens (i.e., arugula, spinach, romaine, baby lettuce)
  • 1 large grapefruit, peeled, section, chopped in large chunks
  • ½ medium jicama, peeled, sliced into strips
  • ¼ cup fresh basil leaves, chopped
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1/2 small chili pepper, finely diced
  • 1 teaspoon freshly grated ginger
  • Pinch sea salt (as desired)


Instructions

  1. Arrange greens in a salad bowl or on the bottom of platter.
  2. In a mixing bowl, mix together grapefruit, jicama, and basil.
  3. In a small dish, whisk together olive oil, lemon juice, chili pepper, ginger, and salt (to taste). Drizzle dressing over jicama grapefruit mixture and toss together.
  4. Pile jicama grapefruit mixture over greens and serve.
