Description
This plant-based, gluten-free recipe celebrates grapefruit season in all its glory by combining it with other cool weather produce, such as jicama, greens, and herbs into a flavorful, healthy salad.
Ingredients
- 3 cups assorted greens (i.e., arugula, spinach, romaine, baby lettuce)
- 1 large grapefruit, peeled, section, chopped in large chunks
- ½ medium jicama, peeled, sliced into strips
- ¼ cup fresh basil leaves, chopped
- 1 tablespoon extra virgin olive oil
- 1 tablespoon lemon juice
- 1/2 small chili pepper, finely diced
- 1 teaspoon freshly grated ginger
- Pinch sea salt (as desired)
Instructions
- Arrange greens in a salad bowl or on the bottom of platter.
- In a mixing bowl, mix together grapefruit, jicama, and basil.
- In a small dish, whisk together olive oil, lemon juice, chili pepper, ginger, and salt (to taste). Drizzle dressing over jicama grapefruit mixture and toss together.
- Pile jicama grapefruit mixture over greens and serve.
