- 6 cups arugula leaves
- 2 firm green pears (i.e., Bartlett), unpeeled, cored, thinly sliced
- 1/4 cup pistachios, shelled
- 2 tablespoons fresh lemon juice
- 1 ½ tablespoons extra virgin olive oil
- Freshly ground black pepper, as desired
- Coarse sea salt, as desired
Instructions
- Place arugula leaves in a 2-quart salad bowl.
- Arrange sliced pears on top of greens.
