Description

Ingredients

  • 6 cups arugula leaves
  • 2 firm green pears (i.e., Bartlett), unpeeled, cored, thinly sliced
  • 1/4 cup pistachios, shelled
  • 2 tablespoons fresh lemon juice
  • 1 ½ tablespoons extra virgin olive oil
  • Freshly ground black pepper, as desired
  • Coarse sea salt, as desired

Instructions

  1. Place arugula leaves in a 2-quart salad bowl.
  2. Arrange sliced pears on top of greens.
  3. Sprinkle with pistachios.
  4. Drizzle with fresh lemon juice and olive oil.
  5. Sprinkle with black pepper and coarse sea salt.
  6. Serve immediately.
