Ingredients

  • 4 Persian cucumbers, thinly sliced
  • 2 plum tomatoes, chopped
  • ¼ red onion, diced
  • 2 tablespoons chopped fresh cilantro or parsley
  • 2 tablespoons chopped fresh mint
  • ½ lemon, juiced
  • Pinch black pepper, sea salt, and cumin

Instructions

  1. Toss all ingredients together. Adjust seasonings as needed.
  2. Chill until serving time.
