Cultured Instant Pot Soy Yogurt

Sharon Palmer RD

Do you want pure cultured soy yogurt without any unwanted ingredients, such as sugars, artificial flavors, and emulsifiers? Well, make your own homemade vegan yogurt the easy with just two ingredients: cultured plain soy yogurt and plain soymilk. You can save beaucoup bucks, and enjoy the healthiest vegan yogurt ever by simply making cultured yogurt in an Instant Pot. And this soy yogurt is healthy, pure, and delicious, making it an excellent part of your daily meals and a versatile ingredient in your favorite recipes.

How do you make Instant Pot vegan yogurt? It’s super fast! Just add a starter of plain cultured soy yogurt and a quart of plain soymilk to the container of an Instant Pot, push the “yogurt” button, and you’ll have a whole quart of cultured soy yogurt in about 8 hours. It only takes a few minutes to mix up the batch before you push the button, so making dairy-free yogurt is as easy as can be in the Instant Pot. The secret is finding some plain cultured soy yogurt as your first starter. Once you make a batch of soy yogurt, always save back ½ cup from each batch to make your next recipe of soy yogurt in about 10 days (this recipe lasts about 10-14 days in the fridge if stored in an airtight container). If you can’t find plain cultured soy yogurt, start with a vegan yogurt starter, following package instructions. Then you’ll have your first homemade yogurt starter to keep your yogurt going for months to come! I love to share ½ cup vegan yogurt starters (dish them up in a small jelly jar) to my friends to get their own vegan yogurt going.

I love to make my own cultured instant pot soy yogurt for a few reasons:

  • You can be picky about the soymilk you use, such as using those that are organic, with no added sugars, and fortified with calcium and vitamin D. You simply cannot find this profile of yogurt on supermarket shelves.
  • Cultured soy yogurt introduces live active cultures, which may act as probiotics for gut health, to your diet. Learn more about fermented foods here.
  • Homemade soy yogurt saves tons of money! A whole batch (without the starter packets) costs the price of a quart of soymilk! Compare that to pricy tubs of vegan yogurt in supermarkets.
  • When you have a whole batch of soy yogurt in the fridge, you’ll be surprised how convenient it is to use in countless dishes, such as smoothies, cereal bowls, sauces, dips, yogurt parfaits, curry recipes, baked goods, and grain bowls.
  • Each serving of fortified cultured soy yogurt provides a good boost of protein, vitamin D, and calcium to your day—key nutrients in a healthy plant-based diet.

Description

Make your own homemade cultured Instant Pot soy yogurt the healthy, easy, budget-friendly way with only two ingredients: plain soy yogurt starter and soymilk. You can be picky about the ingredients and create a delicious, nutritious vegan yogurt for your everyday meals and as an ingredient in your favorite recipes.

Ingredients

Scale
  • ½ cup cultured soy yogurt, plain, unsweetened (i.e., Silk Plain Soy Yogurt) OR 1 packet non-dairy yogurt starter (see instructions below)
  • 1 quart soymilk, fortified, plain, unsweetened (see notes below)

Instructions

  1. Place plain, unsweetened cultured soy yogurt in the container of an Instant Pot. (See below for instructions if you are using a yogurt starter packet.)
  2. Add 1 quart of plain, unsweetened fortified soymilk to the container.
  3. Stir well.
  4. Cover with the lid of the Instant Pot, fasten it well, and press the Yogurt setting (about 8 hours of low temperature cooking designed for culturing yogurt).
  5. When Instant Pot cycle is complete, open lid, and transfer yogurt to an airtight 1- quart container, reserving ½ cup in a separate airtight container for making a future batch of cultured soy yogurt.
  6. Place in the refrigerator for up to 10-14 days. Plan on making your next batch of soy yogurt using the reserved cultured soy yogurt within 10 days.
  7. Makes 1 quart (four 1-cup servings) of plain, unsweetened, fortified cultured soy yogurt.
  8. Use soy yogurt in dressings, soups, smoothies, marinades, cereals, fruit parfaits, baked goods, or dips.

Notes

If you can’t find cultured plain soy yogurt, use a non-dairy yogurt starter to make your first batch, following package instructions. Many starter products utilize packets (about 1 packet per quart of soymilk) and you can make your first batch in your Instant Pot on the yogurt setting. Reserve ½ cup from the first batch to use in subsequent batches of soy yogurt using this recipe.

This cultured soy yogurt makes a thinner consistency.

Choose fortified soymilk with vitamin D and calcium for a nutrient-rich soy yogurt. The nutritional content of the soy yogurt will vary based on the soymilk you use.
