Top 10 Plant-Based St. Patrick’s Day Recipes

Green Pistachio Smoothie

I love a green smoothie, don’t you? This vegan Green Pistachio Smoothie owes its gorgeous green shade to pistachios, kale, and avocados, providing a good kick of protein, healthy fats, slow-digesting carbs, vitamins, minerals, and antioxidant compounds.

Instant Pot Vegetable Barley Soup

Turn to your Instant Pot to make an easy, healthy 8-ingredient soup in 30 minutes. You can also make this soup over the stove or in a crockpot, if you want to skip the Instant Pot. It’s absolutely wonderful warmed up the next day, too.

Pear Fennel Salad with Arugula

This pretty, flavorful salad is perfect for showcasing cool weather produce, including arugula (which came from my very own fall garden!), fennel and pears. Tossed with a whole grain mustard lime vinaigrette, it’s divine!

Cool Mint Cauliflower Salad

Talk about a cool way to enjoy cauliflower! This Cool Mint Cauliflower Salad—which is completely plant-based (vegan) and gluten-free—takes full advantage of chill ingredients, like mint, fennel, parsley, and citrus.

Green and Gold Brown Rice Salad

The contrast of green, verdant colors and sunny, golden shades—as well as vibrant flavors and textures—of this easy plant-based salad really shine. Rich in fiber, plant protein, vitamins, minerals, and phytochemicals, this offers a great nutrition punch to your day. Best yet, you can make this recipe out of many shelf-stable, economical ingredients you can store in your pantry, and it can be created in minutes once your rice is done.

Florentine Oatmeal Bowl

Who says that oatmeal has to only be served sweet? Get going with the savory oatmeal bowl trend, such as this plant-based Florentine Oatmeal Bowl, which is green with the shades of spinach.

Guinness Stew

My plant-based take on the classic Irish pub food Guinness Stew, made from the iconic dark beer, is rich in the flavors of tempeh and loads of veggies. It’s an easy, one-dish meal that is pure comfort food.

Fava Bean Asparagus Saute

This easy spring Fava Bean Asparagus Sauté—which is completely plant-based—uses these vegetables to their very best ability, in a simple, straightforward dish which can be enjoyed as an entrée or side-dish, or served over grains or pasta. Nothing too fussy or complicated—just let the natural ingredients shine through.

Avocado Cilantro Hummus

This brightly colored and flavored Avocado Cilantro Hummus stars avocados, lemon zest, jalapeno, and cilantro along with classic hummus ingredients, including chickpeas, tahini, and olive oil. It’s versatile enough that you can serve it with whole grain pita and veggies, as well as tacosburritos, and tostada salads.

Quince Apple Compote

I just love fruit forward desserts, and it doesn’t get more fruit-centric than a spicy fruit compote. Served warm, it’s the perfect way to showcase the flavors of apples, pears and quinces. This soothing compote has a touch of smoky whisky, spicy ginger and cardamom, sweet raisins, and crunchy walnuts. It’s delicious served in a pretty dessert cup, or as a topping for ice cream (plant-based, of course!).
