Crunchy Cherry Sunflower Seed Wraps (Vegan)

Sharon Palmer

This 6-ingredient plant-based recipe for Crunchy Cherry Sunflower Seed Wraps is so easy you can make it up in a jiffy, plus it’s simply pure fun! Just spread almond butter onto a whole grain tortilla or wrap, and sprinkle with sprouts or micro greens, sunflower seeds, raisins and dried cherries, and then just roll right it on up. You can cut it into slices to create pin wheels, or just slice it in half and wrap it up to tote along in lunch boxes, gym runs, road trips, and on-the-go eating.

This is a great kid-friendly recipe too. Swap out the nut butters if you like for a different type, such as walnut or peanut butter; sprinkle it with another type of dried fruit (try apricots and blueberries), and seed or nut (like pecans and pumpkin seeds). The sky is the limit. This is my go-to when I set out for a plane trip—no refrigeration or utensils necessary, but I can be sure of getting a satisfying, protein-rich mini-meal packed with all of the major food groups in one!
