If you’re looking for a light alcoholic drink recipe full of deep fruit and spice cheer, here’s the beverage for you! This Sparkling Pomegranate Ginger Cocktail is bright with the flavors of pomegranate juice, ginger beer, and mint—with a splash of vodka. I love to serve this ginger pomegranate cocktail in mason jar glasses filled with ice and topped with mint leaves. A spin on a Moscow Mule, you can create a large batch of this cocktail recipe in a pitcher to save time when serving it at a party, too. Lower in added sugars, and with a lighter touch of alcohol, this light seasonal cocktail offers a festive touch during the holidays and winter months. This pomegranate drink is the perfect Thanksgiving cocktail, Christmas cocktail, or New Year’s party cocktail, since it features the cool weather fruit pomegranate arils.

I garnished these cocktails with pomegranate flowers, lemon slices, and mint from my garden. Each of those pomegranate flowers bears a large, ruby-red pomegranate fruit come winter time!

  1. Mix together vodka, pomegranate juice, sparkling mineral water, and ginger beer in a pitcher or cocktail shaker.
  2. Fill four serving glasses (i.e., mason jar glass, or drinking glass) with ice.
  3. Pour the beverage over the ice (about 6 ounces per glass) and garnish with a mint leaf.
  4. Serve immediately.
