Finger Lime Mojitos (Vegan, Gluten-Free)

I just got a package of organic finger limes from Frieda’s. It’s my first time trying these petite limes, about the size of a large fingernail (hence finger limes!). They’re in season right now, so give these delightful little citrus fruit a try. Finger limes are completely unique; when you slice one open, tiny juice vesicles spill out like caviar! That’s why some culinary experts call finger limes “citrus caviar”. Native to Australia, finger lime is also grown in California. And this lovely citrus fruit is becoming more popular with chefs as an intriguing ingredient.

Slice finger lime in half lengthwise and squeeze to reveal “caviar”

When you first bring home finger limes, try cutting one in half lengthwise and pop the citrus caviar into your mouth for an explosion of tart juiciness. And then let your own creativity call the shots. I like to scoop out the citrus caviar to serve over salads, as a garnish over pasta and roasted vegetables, and for an ingredient in drinks, such as my Finger Lime Mojito.

Assemble ingredients for mojito: mint, finger lime, lime, agave, rum, and mineral water

Ingredients

  • 3 finger limes
  • 2 tablespoons fresh mint, chopped
  • 2 teaspoons agave nectar
  • 1 fresh lime, juiced
  • Ice cubes
  • 1 ounce rum (may omit for virgin mojito)
  • Club soda or mineral water

Instructions

  1. Slice finger limes in half lengthwise and scoop “caviar” into a cocktail glass.
  2. Add mint, agave, fresh lime, and rum and muddle together.
  3. Fill cup with ice cubes and then fill with club soda or mineral water.
  4. Stir well and garnish with sliced finger lime.
