Taco Bell Field Trip: Vegetarian and Vegan Options on the Menu

It was so fun going on a field trip to Taco Bell! I met with their amazing dietitians, Missy Schaaphok, RD and Marissa Thiry, RD, who gave us a private tour of the facility and test kitchens. We learned all about the healthy, plant-powered dishes Taco Bell is cooking up.

Did you know that Taco Bell has a certified vegetarian menu, with plenty of vegan options too? Yes, that’s why plant-based eaters are crazy over this quick service restaurant, for late night noshing, on the go eating, and easy lunches.

Taco Bell Headquarters

The headquarters are on Taco Bell founder, Glen Bell Way in Irvine. Yes, there really is a Mr. Bell behind Taco Bell!

Hard to believe this American establishment has been around since 1962!

History Tour with Missy

Missy gave us our own private history tour, as we peeked at some of the cool happenings, which all started with Glen Bell’s first Drive-In and Taco Tia in San Bernardino.

Taco Bell Test Kitchen

It was so cool that we got to see how Taco Bell tests products, with real live consumer research right here in the headquarters, in order to decide which items will live on their menu.

Taco Bell Cantina

At the headquarters, Taco Bell has a test Cantina model, which is a Taco Bell operation with a more upscale menu, which serves alcohol, and has an open kitchen but no drive-through. There is one in Newport Beach, California.

Our Food for All Journey 

Here’s a little snapshot of the nutritional accomplishments at Taco Bell. Missy is working really hard on sustainability measures now, as Taco Bell wants to make a big impact on reducing their environmental footprint.

My Vegan Taco Bell Power Bowl

Taco Bell is a cult classic among vegan and vegetarians, because the restaurant is always coming up with new dishes to enjoy, such as this Power Meal Bowl, which can be made vegan or vegetarian. I got to make my own one in the test kitchen—this is a great plant-based option when you are on the road. Their recipe for black beans is so yummy! And it’s packed with veggies too.
