Description
Grill up fresh corn on the cob and smother them with a bright vegan gluten free cilantro lime topping to create this altogether yummy recipe for Grilled Corn with Cilantro Lime Butter.
Ingredients
Corn:
- 4 ears of corn
Vegan Cilantro Lime Butter:
- 3 tablespoons margarine, non-dairy (or vegan butter)
- 1 lime, zested and juiced
- 1 tablespoon agave syrup (optional)
- 1 clove garlic, finely minced
- 1 small jalapeno, seeded, finely chopped
- ¼ cup finely chopped cilantro
Instructions
- Prepare corn by removing outer leaves and silk.
- Heat grill over medium-high heat.
- Place corn on grill, turning frequently to cook evenly. Cook for about 15-20 minutes, until tender and golden brown.
- While corn is cooking, prepare the Cilantro Lime Butter by mixing together margarine, the zest and juice of one lime, agave syrup (optional), garlic, jalapeno, and cilantro together in a small dish. Should make a thick “butter”.
- When corn is done cooking, place on a platter or baking dish, and brush the Lime Cilantro Topping evenly over the surface of the hot corn, allowing it to melt.
- Serve immediately.
Notes
To save time, for step 4 try adding margarine, lime zest, juice, agave (optional), garlic, jalapeno, and cilantro to a small food processor or blender and pulse until finely chopped and blended.
May break ears of corn in half to make smaller servings.
Try other types of chili peppers, such as Anaheim or Serrano. May use ½ jalapeno if you prefer a less spicy flavor profile.
