Ingredients
Salad:
- 1 bunch (about 6 ounces) kale, tough stems removed, chopped
- 1 large head (about 1 pound 10 ounces) purple cauliflower, separated into small florets
- ¼ medium red onion, finely sliced
- 4 radishes, thinly sliced
- ½ cup raisins
- ½ cup coarsely chopped walnuts
- 2 tablespoons chopped fresh chives (optional)
Creamy Lemon Dressing:
- ¼ cup vegan mayonnaise (make your own here)
- 2 lemons, juiced
- 1 teaspoon agave syrup (optional)
- 1 tablespoon prepared Dijon mustard
- ¼ teaspoon black pepper
- 2 tablespoons chopped fresh parsley (or 1 tablespoon dried parsley)
Instructions
- Prepare salad by adding chopped kale to a large salad bowl.
- Add cauliflower florets, red onion slices, radish slices, raisins, and walnuts to the salad bowl.
- Toss ingredients together gently.
- Make creamy lemon dressing by mixing vegan mayonnaise, lemon juice, agave syrup (optional), Dijon mustard, black pepper, and parsley together in a small bowl until smooth and creamy.
- Pour dressing over the salad ingredients and mix well with tongs to incorporate salad dressing.
