Lemon Ginger Tahini Dressing:
- 2 tablespoons tahini (stir well)
- 1 lemon, juiced (2 tablespoons lemon juice)
- 1 teaspoon fresh, finely grated ginger
- Pinch salt (optional)
- ¼ teaspoon black pepper
- 2-4 tablespoons hot water
- Optional Garnish:
- Pinch smoked paprika
Instructions
- In a small bowl, whisk together tahini, lemon juice, ginger, salt (optional), black pepper, and enough hot water to make a smooth consistency to your preference. A thicker consistency is desirable for use as a dripping sauce, while a thinner consistency is desirable for salad dressings. Texture will thicken slightly upon refrigeration.
- May garnish with smoked paprika, if desired.
- Makes 4 servings (about 1 1/2-2 tablespoons each, depending on consistency). This is the ideal amount for a medium salad bowl (about 1-2 quarts). May make this recipe ahead and store in an airtight container in the refrigerator for up to 7 days.
