Description

This fresh turmeric vinaigrette is a light, healthy, plant-based dressing made with simple ingredients. Packed with vibrant flavor and nutrition, this easy homemade vinaigrette is perfect for salads, bowls, and roasted vegetables.


Ingredients

  • 1 lemon, juiced
  • 2 tablespoons extra virgin olive oil
  • 1 (1-inch) piece fresh turmeric root, peeled, finely shredded (may substitute with 1 teaspoon ground turmeric)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt


Instructions

  1. Whisk together lemon juice, olive oil, shredded turmeric, black pepper and salt in a small dish.
  2. Use as desired by drizzling it over your favorite salad, grain bowl, or entree.
  3. Makes 1/3 cup dressing, enough for one salad recipe that makes 4-8 servings. Store leftovers in a small airtight container in the refrigerator for up to 2 weeks.

Notes

Make a double batch and store it in a sealed jar in the fridge. Just shake it up before serving.
If you don’t have fresh turmeric, substitute with ground turmeric.
