- ¼ cup diced white onion
- 2 cloves garlic, minced
- 1 tablespoon extra virgin olive oil
- 1 tablespoon red wine vinegar
- ½ teaspoon oregano
- 1/4 cup fresh sliced basil
- Salt and pepper (as desired)
Instructions
- Add tomatoes, onion, garlic, olive oil, vinegar, oregano, basil, and salt and pepper (as desired) to a medium mixing bowl. Gently mix well and let stand for 30 minutes.
- Serve at room temperature as an accompaniment for toasted bread. Makes 4 servings (about 2/3 cup each). Store leftovers in an airtight container in the refrigerator for up to two days.
