Asian Style Cabbage Slaw (Vegan, Gluten-Free)

Ingredients

For the cole slaw:

  • 3 cups green cabbage, finely shredded
  • 2 cups red cabbage, finely shredded
  • 2 small carrots, julienned
  • 1/2 red bell pepper, julienned
  • 1/2 yellow bell pepper, julienned
  • 2 scallions, finely sliced on diagonal
  • 1/4 cup cilantro, chopped

For the vinaigrette:

  • 1/8 cup Champagne vinegar
  • 1/8 cup pure maple syrup
  • 2 Tbsp. fresh lime juice
  • 1 tsp. grated/minced ginger
  • 1 tsp. salt
  • 1/4 cup toasted sesame oil

Optional:

  • Chopped cilantro, for garnish
  • Toasted and chopped pecans or other nuts, for garnish


Instructions

  1. Combine all cole slaw ingredients in a large bowl until evenly distributed.
  2. Either whisk or blend the vinegar, maple syrup, lime juice, ginger and salt until well combined and salt is dissolved.
  3. Gradually add the toasted sesame oil until well combined.
  4. Toss the vinaigrette with the vegetables and garnish with cilantro and pecans or chopped nuts of your choice.
  5. Let marinate in refrigerator for 20 minutes before serving.
