Description
These Vegan Swedish Waffles (Våfflor) are a classic Scandinavian recipe made with yeast for light, crisp texture and rich flavor. Perfect for breakfast, brunch, or cozy fika moments, these plant-based waffles are irresistibly delicious.
Ingredients
- 1 ¾ cups plant-based milk, unsweetened, plain (i.e. almond or soy milk)
- 1 1/3 cups white whole wheat flour*
- 2 (.25 ounce or 2 1/4 teaspoons each) packages active dry yeast
- 2 tablespoons organic cane sugar

1/4 cup vegan butter, melted (i.e., Myoko’s)
Instructions
- Heat plant-based milk until it is lukewarm (105-115 F; warm to the touch) over the stove or in the microwave. Do not over heat, as it will kill the yeast.
- Add the warm plant-based milk to a mixing bowl, along with flour, yeast, sugar, and melted butter. Stir well.
- Cover with a clean kitchen towel, and allow to rise for 30 minutes in a warm place (try a warm, but not hot, oven).
- Heat a waffle maker to medium-high setting. Spray with nonstick cooking spray. Pour about 1/2 cup batter onto hot griddle, spread evenly over surface, and cook over medium-high setting until golden and crispy (about 4-5 minutes).
- Repeat to make all waffles. Makes 5 (7-inch) waffles.
- Serve immediately with fruit, plant-based whipped topping, jam, or syrup, as desired.
Notes
*White whole wheat flour is ground from a variety of whole wheat that is lighter and more tender. You can also substitute traditional whole wheat flour, or combine half all purpose and half whole wheat flour in this recipe.
To make this recipe gluten-free, substitute gluten-free flour blend for wheat flour.
