This Strawberry Spinach Salad with Vegan Feta and Balsamic Vinaigrette is a super light, fresh, healthy salad to enjoy at any meal. With only 6 ingredients, you can toss it together in 15 minutes.

Salad:
- 4 cups packed baby spinach leaves
- 1 cup sliced fresh strawberries
- 1 small cucumber, unpeeled, sliced
- 2 tablespoons fresh basil leaves, chopped
- 1 (8-ounce) package vegan feta cheese (i.e., Violife), cubed (about 1-inch)
Balsamic Vinaigrette:
- 1 ½ tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar
- Pinch salt (optional)
- Pinch black pepper
Instructions
- Place spinach, sliced strawberries, sliced cucumber, chopped basil, and feta cubes in a large salad bowl (about 2-quart size).
- Gently toss together salad ingredients.
- Whisk together olive oil, balsamic vinegar, salt, and pepper in a small dish until combined.
- Drizzle vinaigrette over the salad and gently toss to distribute dressing.
- Serve immediately. Makes 6 (about 1 ¼ cup) servings.
