Ingredients

- 3 cups of cooked black beans
- 1 cup of cooked quinoa*
- 1 cup of tomato sauce
- 2 medium tomatoes, cubed
- 1 jalapeno, de-seeded & chopped
- 3 garlic cloves, minced
- ¼ cup scallions, chopped
- ½ red bell pepper, chopped
- ½ green bell pepper, chopped
- 2 tablespoons of olive oil
- 1 tablespoon of cumin
- Salt and cayenne pepper to taste
Instructions
- In a pot, heat 2 tablespoons of olive oil and add chopped peppers, scallions, garlic, tomatoes, and 1 tablespoon of cumin. Cook for 5 minutes.
- Then add 1 cup of tomato sauce, 3 cups of black beans, and 1 cup of cooked quinoa. Cook for 15 minutes under low-medium heat.
- Add salt and cayenne pepper to taste!
