Ingredients
Scale
Salad:
- 1 cup cooked edamame
- 3 carrots, grated
- 1 cup cooked wheat berries
- 1 cup finely chopped kale or other leafy green
Dressing:
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 1 teaspoon of maple syrup
- 1 lemon zested and juice
- Pinch of salt and pepper
- 2 tablespoons of fresh or dried oregano
Instructions
- In a closed container mix all the ingredients for the dressing shake until combined.
- In a large bowl add all the ingredients for the salad, add the dressing and mix well. Best served chilled.
