Ingredients

Scale

Salad:

  • 1 cup cooked edamame
  • 3 carrots, grated
  • 1 cup cooked wheat berries
  • 1 cup finely chopped kale or other leafy green

Dressing:

  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 teaspoon of maple syrup
  • 1 lemon zested and juice
  • Pinch of salt and pepper
  • 2 tablespoons of fresh or dried oregano


Instructions

  1. In a closed container mix all the ingredients for the dressing shake until combined.
  2. In a large bowl add all the ingredients for the salad, add the dressing and mix well. Best served chilled.
