Description

Based on shredded red cabbage, cilantro, red onion, and radishes, this recipe for Mango Red Cabbage Slaw adds a touch of natural sweetness by way of fresh, chopped mango.

Mango Red Cabbage Slaw: 

  • 4 cups coarsely shredded or thinly sliced red cabbage 
  • 1 cup coarsely chopped cilantro
  • ½ red onion, thinly sliced
  • 4 pink or red radishes, thinly sliced
  • 1 small mango, peeled and chopped
  • 2 tablespoons pumpkin seeds

Lime Chili Vinaigrette:


Instructions

  1. To make the slaw, mix together in a large bowl shredded red cabbage, cilantro, onion, radishes, and mango. 
  2. To make the vinaigrette: Whisk together in a small bowl lime juice, olive oil, chili powder, and salt (optional). 
  3. Gently toss the vinaigrette into the slaw, and mix until combined. 
  4. Sprinkle with pumpkin seeds.
  5. Makes 8 (about 1 cup) servings.
