- 6 cup oats
- ½ cup sunflower seeds, raw
- ½ cup shredded coconut, unsweetened
- ¼ cup hemp seeds
- 1 teaspoon ground ginger
- 1 teaspoon cinnamon
- ½ cup sunflower seed butter
- 1 medium orange, juiced
- 2 tablespoons pure maple syrup
- 1 teaspoon vanilla
- 1 cup dried peaches, chopped
Instructions
- Mix oats, sunflower seeds, coconut, hemp seeds, ginger, and cinnamon in a large mixing bowl.
- Preheat oven to 350 F.
- Mix sunflower seed butter, juice, maple syrup, and vanilla in a small pot and heat over medium, stirring until smooth and bubbly (or place in a microwave-safe dish and heat for 2 minutes until warm).
- Remove pot from heat, stir well until smooth, and pour into the oat mixture, tossing until well distributed. Stir well.
- Spread out granola mixture evenly onto a baking sheet. Place in oven on the top rack.
- Bake for about 20 minutes, stirring every five minutes, until golden brown.
- Remove, cool, and mix in dried peaches.
- Store in an airtight container.
