Avocado Papaya Salad:

  • 4 cups packed chopped Romaine lettuce (about 1 small head)
  • 1 large papaya, ripe, peeled, deseeded, sliced into chunks (about 2-3 inches)
  • 1 large avocado, ripe, peeled, pit removed, sliced into chunks (about 2 inches)
  • 3 Armenian cucumbers, with peel, thinly sliced
  • ¼ medium white or red onion, thinly sliced into half moons
  • ½ cup coarsely chopped fresh cilantro
  • ¼ cup toasted cashews

Lime Ginger Dressing:


Instructions

  1. In a large salad bowl (about 2 ½ quart capacity), add lettuce, papaya, avocado, cucumbers, onion and cilantro.
  2. Make Lime Ginger Dressing by whisking together lime juice, rice vinegar, oil, soy sauce, agave syrup (optional), jalapeno, and ginger in a small dish.
  3. Drizzle dressing over salad ingredients and gently toss to distribute.
  4. Top with cashews.
  5. Serve immediately.
  6. Makes 8 servings (about 1-1/4 cups each).
