Avocado Papaya Salad:
- 4 cups packed chopped Romaine lettuce (about 1 small head)
- 1 large papaya, ripe, peeled, deseeded, sliced into chunks (about 2-3 inches)
- 1 large avocado, ripe, peeled, pit removed, sliced into chunks (about 2 inches)
- 3 Armenian cucumbers, with peel, thinly sliced
- ¼ medium white or red onion, thinly sliced into half moons
- ½ cup coarsely chopped fresh cilantro
- ¼ cup toasted cashews
Lime Ginger Dressing:
- 1 medium lime, juiced
- 1 tablespoon rice vinegar
- 1 ½ tablespoons avocado oil
- 1 tablespoon soy sauce
- 1 teaspoon agave syrup (optional)
- ½ jalapeno, finely chopped (may add more if prefer spicier flavor)
- 1-inch piece fresh ginger, peeled, finely shredded
Instructions
- In a large salad bowl (about 2 ½ quart capacity), add lettuce, papaya, avocado, cucumbers, onion and cilantro.
- Make Lime Ginger Dressing by whisking together lime juice, rice vinegar, oil, soy sauce, agave syrup (optional), jalapeno, and ginger in a small dish.
- Drizzle dressing over salad ingredients and gently toss to distribute.
- Top with cashews.
- Serve immediately.
- Makes 8 servings (about 1-1/4 cups each).
