Description

Whip up an easy, healthy delicious Apple Raisin Red Cabbage Slaw recipe by shredding red cabbage and apples and tossing in sunflower seeds, raisins and a smoky lemon cumin vinaigrette. Perfect for red cabbage slaw for tacos!


Ingredients

Slaw:

  • 8 ounces (about 4 cups) coarsely shredded or shaved red cabbage
  • 1 large apple, unpeeled, cored, sliced thinly
  • 1/2 cup chopped fresh cilantro
  • ½ cup raisins
  • 1/3 cup sunflower seeds

Smoky Lemon Cumin Vinaigrette:

  • 1 ½ tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon agave nectar (optional)
  • 1/4 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • ¼ teaspoon smoked paprika
  • 1/4 teaspoon salt (optional)


Instructions

  1. Toss together cabbage, apple, cilantro, raisins and sunflower seeds in a salad bowl.
  2. To make Smoky Lemon Cumin Vinaigrette: Whisk together oil, lemon juice, agave nectar (optional), cumin, garlic, smoked paprika, and salt (optional) in a small bowl. Drizzle dressing over salad and toss well.
  3. Serve immediately. Refrigerate leftovers in an airtight container for up to 3 days.
