Slaw:
- 8 ounces (about 4 cups) coarsely shredded or shaved red cabbage

1 large apple, unpeeled, cored, sliced thinly
- 1/2 cup chopped fresh cilantro
- ½ cup raisins
- 1/3 cup sunflower seeds
Smoky Lemon Cumin Vinaigrette:
- 1 ½ tablespoons extra virgin olive oil
- 2 tablespoons lemon juice
- 1 teaspoon agave nectar (optional)
- 1/4 teaspoon cumin
- 1/4 teaspoon garlic powder
- ¼ teaspoon smoked paprika
- 1/4 teaspoon salt (optional)
Instructions
- Toss together cabbage, apple, cilantro, raisins and sunflower seeds in a salad bowl.
- To make Smoky Lemon Cumin Vinaigrette: Whisk together oil, lemon juice, agave nectar (optional), cumin, garlic, smoked paprika, and salt (optional) in a small bowl. Drizzle dressing over salad and toss well.
- Serve immediately. Refrigerate leftovers in an airtight container for up to 3 days.
