Description

Make this super easy, yummy vegan sandwich in 8 minutes with only 6 ingredients, including zucchini, tomatoes, and basil.

Instructions

  1. Heat olive oil in sauté pan or skillet and add zucchini. Cook zucchini on each side until it is golden brown, about 8 minutes.
  2. While zucchini is cooking, pop bread slices into a toaster to toast.
  3. Place toasted bread slices on a serving dish, and spread each slice with soft plant-based cheese (3/4 ounce each).
  4. Arrange zucchini on top of plant-based cheese on each sandwich.
  5. Arrange sliced tomatoes on top of zucchini on each sandwich.
  6. Top with 2 leaves fresh basil on each sandwich.
  7. Serve immediately. Makes 1 serving (2 open-face sandwiches each).

Notes

To make this recipe gluten-free, use gluten-free plant-based soft cheese and bread.
